This month, I made 2 easy low carb and heart healthy Summer inspired recipes using Summer fruits and vegetables as ingredients:





Pattie's notes: for vegetarian option swaps chicken for tofu; in Caesar Sandwiches use very frim tofu and in Balsamic Berry Salad in a Jar uses silky or soft tofu or chickpeas instead of chicken.
